    • Tenderloin filet
    • Coarse sea salt and ground black pepper
    • Butter
    • Garlic clove, skin-on and crushed

    4. Take out of the pan and leave somewhere warm to rest for 5-10 minutes, then serve.

    Just realised this is a British site!  What steak-lover chooses tenderloin and fries it while pressing its juices into the pan with a spatula.  Any serious carnivore lusts after the flavour of a sirloin or the tenderness of a ribeye.  No self-respecting chef fries his meat.  A decent steak deserves a hot grill.
